Discussion: Canon or not canon?

I've been thinking about making this post for a while, and it came up in the discussion post yesterday. So, here we go.

Do you prefer to have your ships be canon or fanon?
Do you tend to usually ship couples that turn out to be canon ones, or ones that aren't canon?
